Game Preparation and Cooking: from field to plate.
Description
Enjoy an interesting and absorbing day learning how to prepare and cook game. We will focus primarily on Pheasants and Partridges and when available other game such as Pigeons and Rabbits. You will go away with great recipe ideas as well as some of your own prepared dishes. All the game is sourced from local Suffolk shoots and estates. In this course, which is hands on, you will learn how to • Prepare fresh Pheasants and Partridges • Clean and present for cooking • You will see demonstrations of various cooking processes, plus experience hands on cooking of recipes such as Pheasant Goujons, Pheasant Pate, Partridge En-croute • Lunch is provided from our morning cooking sessions • You will leave with some of the food you have prepared Cooking has to be enjoyable and accessible. We like to think our courses are memorable enabling the skills you need for cooking at home, for family and friends. All ingredients are healthy and made with locally sourced meats and Game and vegetables in line with the seasons. During breaks you can stretch your legs in our two acres of grounds and see our horses and chickens. Country Cooking Classes also offer a wide range of courses from across the Globe such as Tapas, Sushi, Mexican, Indian, Italian.
What's included in the price?
All ingredients are included for your day. Aprons are provided, but please wear suitable clothes and shoes as, for those of you who wish to participate, there is a hands-on plucking and preparation of birds. Each student has access to their own set of Kitchen utensils (so no waiting for others to finish!). Tea, coffee, water and snacks are available throughout the day. Lunch is provided from what we prepare during the course in the morning. What you prepare during the afternoon session is available for you to take home and impress your family and friends of your newly learnt skills.

I have had a passion for cooking all of my life, learning early cooking skills from my Mother and Grandmother. I grew up on my parents farm in Herefordshire, so I’m very much a country boy at heart. In my early teens I turned my love of cooking into a way of earning pocket money, working in restaurants and bistros. I have run my own bistro and restaurant in Suffolk, including outside catering. Although I enjoy the rustic nature of cooking, I have always had a passion for food across the globe and have had the pleasure of working with chefs from many different countries. I incorporate many of these cuisines in my every day home cooking as well as my workshops. Where We Are Our classes are run at our beautiful Suffolk small holding deep in the countryside close to Bury St Edmunds. Come and enjoy our gardens and animals whilst you hone your cooking skills with the many courses we offer. Make it a short break with so much to explore in Suffolk and Norfolk (Nelsons Birthplace) or visit Sutton Hoe to view the Viking Burial Treasure or just spend a day relaxing on North Norfolk’s wonderful sandy beaches
