Take Your Gluten Free Bread Making To The Next Level, Using Natural Sourdough Starter Sourdough bread is within the reach of every gluten-free baker. This course shows that all you need is a naturally gluten free sourdough starter to leaven your dough, and a knowledge of the range of flours and binders. This course is built around three different GF sourdough starters, which you will make yourself from scratch, using organic brown rice flour, buckwheat flour and sorghum flour. You will learn how to use your starters to prepare leaven for making 6 different sourdough recipes, including rustic boule, little rolls, a sandwich loaf and even sourdough pizza. Once you have grasped the basics of sourdough fermentation, you'll be off on one of baking's greatest adventures, inventing sourdough recipes of your own! Recipes are either vegan or suggest vegan substitutions.

What you will need
A device on which to watch the video lectures, and read the written articles. Instructions for making the starters are provided. They take between 3- 5 days to be ready for use, so you should plan ahead for your first baking day. A Shopping List of the GF flours and other ingredients we use on the course is in Lecture 5. Most bakers will already have a basic range of equipment, but the list of what we use on the course is given here: Digital scales, or measuring cups. Probe thermometer Jug Mixing bowl (which will fit in your fridge) Plastic scrapers Sharp lame, grignette or craft blade for scoring dough A couple of metal baking trays and a loaf tin. A couple of bannetons or proving baskets. A clean dish brush (or similar) for brushing out bannetons. A silicone spatula. A couple of clean shower hats. 3 tall glass jars with lids, and some elastic bands!
